  • 1 lb whole wheat penne pasta
  • 1 lb broccoli florets about 5-6 cups
  • 1/3 cup olive oil
  • 1/2 teaspoon onion powder
  • 1 tablespoon lemon zest
  • 2 cloves fresh garlic (minced see notes)
  • juice from half a lemon
  • 1/2 teaspoon kosher salt plus more to salt water
  • fresh ground pepper
  • 1/2 cup grated parmesan cheese plus more for topping
  1. Heat a big pot of salted water till it boils.
  2. Once the penne is added, cook it for five minutes. When the broccoli is brilliant green and tender, add it and simmer for a further three to four minutes. Empty and put back into the pot.
  3. Mix thoroughly after adding the garlic, onion powder, salt, and pepper to the saucepan. Mix in the olive oil. Sprinkle Parmesan cheese on top and stir. Right before serving, sprinkle more Parmesan cheese over top.

When there is barely a minute left for the pasta to cook, you may substitute frozen broccoli by simply adding it to the pot.
Add 1/2 teaspoon of garlic powder if you want the flavor of garlic without the bits of minced garlic since the garlic isn’t cooked all the way through.
