Turkey Meatloaf with Zucchini

Here’s a suggestion: Add healthful ingredients to the cuisine your family already enjoys, rather than always attempting to convince them to eat healthier. I used some grated zucchini into my turkey meatloaf recipe as I had a ton of zucchini from my garden that needed to be used up. The meatloaf turned out to be quite tasty and moist.

Turkey Meatloaf Ingredients

  • Sauce: To coat the top before baking, mix two teaspoons of Worcestershire sauce with a quarter cup of ketchup and the remaining ingredients.
  • Meat: Choose from sublean ground beef or chicken or 93% lean ground turkey.
  • Onion: In my original recipe for turkey meatloaf, I used dried onion flakes instead of sautéing fresh onion. You don’t have to sully another pan!
  • Zucchini: The secret to tender meatloaf is zucchini. Grate till you get three-quarters of a cup, then cover with a cloth and press out any remaining moisture.
  • Binders: To prevent turkey meatloaf from crumbling, egg and oats or breadcrumbs tie the meat together. You may use panko or normal or seasoned breadcrumbs if you don’t have oats. Additionally, add gluten-free breadcrumbs or oats to make a meatloaf.
  • Seasonings: Use kosher salt and marjoram to season the meatloaf. If you must use another herb in place of the marjoram, use dried thyme.
