2 fresh red chillies
50 g softened butter
1–2 teaspoons paprika
1 whole free-range chicken
2 tablespoons olive oil
Sea salt, to taste

Preheat your oven to 180°C (350°F).
Finely chop or blend the fresh red chillies into a paste, then mix thoroughly with the softened butter. Fold in the paprika until evenly combined.
Gently loosen the skin of the chicken over the breast and thighs using your fingers, being careful not to tear it. Spoon the peri-peri butter underneath the skin and spread it evenly, ensuring it covers as much surface area as possible. This step keeps the meat juicy while locking in flavor.
Place the chicken in a roasting pan. Drizzle olive oil over the skin and sprinkle generously with sea salt for a crisp, flavorful finish.
