Ingredients:

  • 6 medium apples (Granny Smith or Honeycrisp work well for a sweet-tart flavor contrast)
  • 2 cups granulated sugar
  • 1 cup water

Directions:

  • In a medium, heavy-bottomed saucepan, combine 2 cups granulated sugar, 1 cup water, 1/2 cup corn syrup, and 1/4 teaspoon cinnamon (if using).
  • Place the saucepan over medium heat and stir constantly until the sugar completely dissolves. This should take a few minutes, and you’ll notice the mixture becoming clear and smooth.

3. Cook the Mixture:

  • Increase the heat slightly to bring the mixture to a boil. Once boiling, do not stir to avoid crystallization.
  • Allow the mixture to continue boiling until it reaches the hard crack stage (300°F or 150°C) on a candy thermometer. This step may take around 7-10 minutes. Tip: Be cautious as the syrup will be extremely hot at this point.

4. Add Food Coloring:

  • Once the mixture reaches the desired temperature, remove the saucepan from heat.
